Lobster Risotto with White Wine, Mustard and Passion Fruit
1 pound lobster tail
5 ounces mushrooms, sliced
1/2 cup dry white wine
3 tablespoons mustard
3 tablespoons olive oil
3 cloves garlic, finely minced
1/2 medium onion, chopped
2 cups risotto rice (Arborio,Carnaroli)
1/2 cup passion fruit juice
1/2 cup grated Parmesan cheese
Salt and pepper to taste
1.Heat olive oil, saute garlic and onion until brown. Add lobster, cook for 3 minutes, stirring constantly. Add salt, pepper,wine, mustard, passion fruit juice and mashrooms. When boil, reduce heat to low, put the lid on and cook for 10 minutes.
2.Add rice and 2 1/2 cups of water. Cook partially covered until water has almost evaporated.
3.Add Parmesan cheese, cover and serve after 5 minutes.
