Deviled Lobster
Ingredients:
2 cups lobster meat (Note: after removing the flesh from the shell, clean the shell thoroughly, to use it as a receptacle in which the lobster mixture will be baked)
1 cup milk
1 tablespoon chopped onion
2 tablespoons butter
2 tablespoons flour
1 teaspoon salt
Dash of Cayenne pepper
1/8 teaspoon paprika
1/8 teaspoon pepper
1 tablespoon lemon juice
1 tablespoon chopped parsley
1/4 cup buttered cracker crumbs
Directions:
1.Saute the onion in the butter. Add the flour, salt, Cayenne pepper, paprika, pepper, lemon juice, and parsley. Mix well and add the milk. When the whole has cooked until it is thick, add the lobster.
2.Pour the mixture into the clean shell of the lobster, sprinkle with cracker crumbs and place in the oven long enough to brown the crumbs.
3.Remove from the oven, place on a serving dish and if desired garnish with the claws and tail of the lobster. Serve immediately.
