1 lobster (2 pounds)
1/2 cup olive oil
1 tablespoon butter
1 teaspoon mustard
2 tablespoons fresh chopped parsley
1 pinch oregano
2 tablespoons dry bread crumbs
salt and pepper to taste
1.Wash lobster, cut it in half lengthwise. Clean the lobster by removing the intestine.
2.Place lobster shellside down on a baking pan.
3.Mix together mustard, salt, pepper, parsley and oregano. Add olive oil and butter. Cook for 5 minutes in low heat.Bush this mixture onto lobster flesh.
4.Sprinkle dry bread crumbs over lobster. Bake for approximately 25 minutes at 200º or until tender.
5.Serve warm, garnished with lemon slices.
